Ethiopia’s most prized output comes from the region surrounding the town of Yirgacheffe. Most of the coffees cultivated in this region are heirloom varietals, comprised of genetically diverse coffees, unlike any in the world. 30% of coffees labelled as Yirgacheffe derive from the Gedeo region, the home of the Koke processing station, where over 4000 smallholder farms send their harvests.

Brewing Suggestion: This coffee's acidity is delicious, but can become harsh if brewed too strong. A suggested 1:17 brewing ratio is desirable.
